Potato tubers contain a large amount of starch. Starch is the main source of energy for edible potatoes. - Generally speaking, early-maturing varieties contain 11% - 14% starch, middle-late-maturing varieties contain 14% - 20% starch, and high-starch varieties have more than 25% tubers. The tubers also contain glucose, fructose and sucrose.
