The composition of sweet potato, potato varies greatly due to different producing areas and varieties. Fresh potato usually contains a lot of water, about 60-80% of the total weight of potato, while the content of starch is 15-20%. The typical analysis of potato is as follows: water 72.4%, carbohydrates 25.2%, protein 2%, crude fiber 0.4%, fat 0.2%, inorganic ash 0.8%, and various vitamins. In carbohydrates, mainly it is starch, other 3 -5% it contains dextrin, glucose and fructose.

Fresh potato is thin skin and contains high moisture. So its storage is difficulty, normally in 15-20 ℃, relative humidity is 80%, we can storage it.But it’s difficult to meet the conditions. And during storage period under the action of amylase, the starch will transfer into sugar. Because fresh potatoes are difficult to store, they are required to be stored for no more than 60 days to produce starch.

Potato washing → Crushing and milling → Centrifugalizing →  Desanding → Purifying and concentrating → Dewatering → Drying
